“The best fish I ever had was at the Palermo outdoor markets while traveling in Italy a few years ago. I was there at night and a vendor was grilling Branzino right off the boat. No special treatments, the cook just brushed it with olive oil and some fresh herbs, then sprinkled some sea salt over the top before tossing it on the grill. It’s one of the best things I’ve ever tasted.”
